  • 1 tablespoon brown sugar (or a sugar substitute)
  • 1/2 tablespoon vegetable oil
  • Apple cider vinegar, to taste
  • Juice and rind of 1/2 lime

Instructions:

  1. Combine Ingredients: In a blender or food processor, combine all the ingredients listed above.
  2. Blend: Blend or process until you achieve a smooth paste-like consistency.
  3. Taste and Adjust: Taste the marinade and adjust the seasoning as needed. Add more Scotch Bonnet for extra heat, more brown sugar for sweetness, or vinegar for acidity.
  4. Marinate: Place your meat of choice (chicken, pork, fish, or tofu) in a container and generously coat it with the jerk marinade. Marinate for at least 4 hours, or preferably overnight, in the refrigerator.
